Sour Cream Coffee Cake with Coconut Streusel #TheCakeSliceBakers

For me, baking is a creative outlet. I love to do things that stretch me artistically. But lots of my crafts and artistic endeavors just end up taking up space in the garage. Being able to eat (and share!) my creations is a way to cut down on the clutter.

Of course, you wouldn't guess that by looking at my garage...but trust me--it would be 100x worse if I wasn't a baker too.



You can usually get an idea whether I have been doing something to scratch my proverbial creative itch by my blog cake choices. Sometimes I'm just itching to decorate something, and that shows in my baking (like here and here). 

Well, I've had a lot of opportunities to do artsy things lately.

And I just wanted to bake something good, simple and tasty. 

No frills. Just yummy.


This Sour Cream Coffee Cake with Coconut Streusel fit the bill.

Sour cream is a magical ingredient when it comes to baked goods--it keeps them moist and gives them a lovely texture.

Speaking of texture, the coconut in the streusel is also lovely. I know coconut is a polarizing ingredient, but in this recipe it becomes crunchy and melts in your mouth instead of being chewy. My picky girl (who, a couple of days ago started crying when she accidentally chose a coconut popsicle) liked this cake. And the brown sugary, crunchy bits were delicious too. A teaspoon of lemon zest added a surprising bright note to finish it off.



Not a showy cake, but totally a keeper.

I made it for breakfast, and kept going back for one little sliver after another throughout the day.

Sour Cream Coffee Cake with Coconut Streusel

from Little Everyday Cakes by Candace Floyd

Streusel:
1/2 cup packed brown sugar
1/2 cup flour
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup melted butter
2/3 cup shredded coconut

Cake:
1 1/2 cups flour
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1/2 cup softened butter
1 cup sugar
2 eggs, room temp
1 cup sour cream
1 tsp vanilla extract
1 tsp finely grated lemon zest

1. Heat the oven to 350. Grease and flour an 8x8 square pan.
2. Make the streusel by combining the flour, salt, cinnamon, and nutmeg in a medium sized bowl. Pour in the melted butter, and blend with a fork. Stir in the coconut, mixing well.
3. Beat the butter in a separate bowl with an electric mixer at high speed, until creamy. Add the sugar and beat about four minutes--until nice and fluffy. Add the eggs one at a time, beating well after each. Turn the speed to low, and alternate adding the flour mixture and sour cream--beginning and ending with the flour. Beat until *just* combined. Add in the lemon zest and vanilla, and mix for 30 seconds. 
4. Smooth half of the batter evenly into the prepared dish. Top with 1/2 of the streusel. Scrape the remaining batter over the streusel, smoothing it into an even layer. Top with the remaining streusel.
5. Bake for 35 to 40 minutes, or until a toothpick comes out cleanly. Cool completely on a wire rack.

  1. I do love a good coffee cake, especially when the streusel is on point - and your streusel and cake definitely looks on point. Another one to add to my list and I'm pretty sure that at some point I will have baked through the entire book.
