It’s a new year and a new recipe book for the Cake Slice Bakers. For 2024, we’re baking out of Rebecca Firth’s “The Cake Book.” And I can already tell it’s going to be a good one!

This cake is just what you’d want from something called a “Tangerine Glazed Donut Cake.”
A tender, moist crumb.
Hint of bright citrus flavor.
Easy to make.
Looks super cute.
It actually reminds me of an amazing snack cake that my mother-in-law makes. And it could provide the perfect canvas to mix it up when it comes to flavor.
A chocolate glazed donut cake?
Strawberry cream cheese?
Cinnamon swirl?
Yes please. To all of them.
In the recipe, the cake is glazed with a slightly transparent blend of tangerine juice and powdered sugar. I decided to glaze it per directions (Rebecca Firth says that’s the key to locking in moisture so that it lasts several days).
To make it look more donutty, I added a couple tablespoons of powdered sugar to the excess glaze, a tiiiiny drop of pink food color, and a little white food color to make it more opaque.
And sprinkles. Can’t forget the sprinkles.
